Here in Brooklyn, we're half-way between the hop country of Yakima Valley, Washington and the hop country of Kent in England. So we use the bright citrusy American hops to bring the noise and the earthy English hops to build the foundation of a hop monster brandishing five pounds of hops per barrel with considerable finesse.
