Brewed exclusively for Izakaya Meiji and Agrarian, this is an original American Lager. With organically grown Abenaki heirloom corn and organic Pils barley malt for a slightly rich cereal flavor profile, we use a sour mash technique to create crisp acidity which balances this sweetness. The fermentation reflects the term "Common", meaning a rustic, warm, uncontrolled fermentation with a lager yeast; this contributes fruity ale-type flavors to the front of the palate while keeping the finish crisp, clean, and dry. Nugget hops from our farm add firm bitterness to the otherwise soft beer, but contribute little flavor or aroma. Inspiration for this beer was gleaned from historical American frontier beer, where refrigeration technology was non-existent, and ingredients were location-dependent. This reflects the Agrarian mantra of growing our own, and buying ingredients direct from local farmers. The beer itself is a refined version of an undistilled sour mash whiskey wash, and is right at home alongside its distilled cousin, a fine whiskey.
