
Our first year in operation, we open fermented. In doing so, it was obviously a very risky decision. However, in time it paid off when we were able to achieve open spontaneous fermentation. That strain collected was the Wild Angels strain, which is the primary wild strain in Cru. Plus, where would you ever see a label with a goat and a pig 30-style boxing?
