Brettanomyces Claussenii in secondary fermentation lends a subtle Brett character reminiscent of pineapple and lemongrass in the aroma.The body is ultra dry with a slightly tart finish from the acidulated malt. The beer shows traces of the devoir base but adds flavor components from wild yeast. A great beer for white wine or dry cider enthusiasts.
