Einkorn has the star role in the beer. Used in a 55 % amount, this ancient cereal, Triticum monococcum, the first one to be domesticated, gives the beer some marvelous spicy and resinous notes that embrace the yellow fruit flavors very well. This beer was born as a collaboration with Mulino Marino from Cossano Belbo (Cuneo), who uses for bread making.
