
Starting as an American style Pale Ale with lots of classic American hop character, each batch is split up and fermented with different yeast. One tank gets a neutral American yeast, while the other gets a French farmhouse Saison strain. The French yeast imparts a black peppercorn spice character, and finishes dry. After fermentation the tanks are blended back together. It’s a real hybrid of a beer.
