The inspiration, other than loving the zesty spiciness of wit, lies somewhere between a plate of lemon meringue pie and a cup of Earl Grey tea. The colour is as beautiful as a beer can get: a hazy, unfiltered warm pastel yellow. The lemon and bergamot poke through the aroma, a hint of sharpness cuts through the middle, it’s dry and interesting and quenching and a dry, phenolic spice ends the mouthful like a full stop ends a sentence.
