This beer is made with a Saison Dupont yeast blend. One yeast strain lends
to aromatics while the other finishes the beer to a low gravity. We used a low temperature acid rest to increase acid levels and added a load of Michigan
Montgomery Cherries. There was no temperature control while this was in the ferm, and when she settled out we dry hopped her with rose petals.
