A ‘saison’ (French for season) has been traditionally brewed in the south of Belgium (Wallonia) or the north of France during the cooler months following harvest and then stored in cellars or under piles of hay until the summer months when it is brought out to enjoy. These beers were originally low ABV beers as the workers would drink during the day when working in the fields. Over the past 25 years or so, the alcohol content has risen to become a more robust beer while still retaining the original characteristics of the style.
