It starts with a grain bill of half dark floor-malted barley and half wheat malt-- part of which we smoked in-house on a mix of apple and pear wood from our friend's orchard. Then we fermented it as a big ol' imperial-strength weissbock, with the color and maltiness of our favorite dunkels and a hint of rauchy smoke. THEN we aged it for 10 months in bourbon barrels from our friend's distillery, with a healthy dose of Candy Cap mushrooms thrown in for good measure. It's big. It's complex. It's fucking delicious.
