The Red Fish is another offering from the wood barrel in the brewery. Beers that spend time in there (usually no more than 2 to 3 months in the barrel, with further aging time in a cask or keg) develop a tart, funky quality while maintaining some of their original character. The result is a beer that is Amber, with a complex mix of caramel, spice notes, a dry tart funkiness and a smooth woody finish.
