
The Lou Pepe series of beers are made with two year old lambic, often coming from barrels in which only wine has been kept before.
The second fermentation is not caused by addition of young lambic but of sweet liquor. Yeast transforms the sugar into carbon dioxide. All the lambic beers which are used, are brewed in the same season and the use of liquor instead of young lambic makes the taste of the fruit more intense. Lou Pepe Kriek contains 300 g of cherries per liter. This fruity taste, combined with the wine flavor coming from the Bordeaux barrels, distinguishes this special beers from standard Cantillon Kriek.
