This new school style is developed with the growth of the US hop industry and the use of Belgian yeast in American brewing. Dry, notes of white pepper provided by the Belgian Ale yeast balance out the notes of apricot and citrus from the American hops. Although dry, this beer’s mouthfeel is silky, yet firm.
