We took Providence and used it as the base beer to experiment with. We added in a low intensity Brettanomyces strain. The Brett added in a low intensity earthiness. After that secondary fermentation we added in olallieberries and the beer went into a third fermentation. The result is a light, refreshing beer with a touch of tartness. Available only in 6 ounce pours, no growlers to go.
