We wanted to make rye based beer that highlighted the rye malts unique spicy taste but without the overpowering earthy tones that can come along. We found mashing the base malt at a higher temperature created the perfect balance. We then hopped in with everything under the sun and found our favorite combination came from using predominantly European noble hops that balanced the spiciness from the rye malt and the sweetness from the mashing technique, to make an easy drinking pale ale.
