Beautifully tart, this is a light bodied and refreshing Berliner styled Weisse ale. We grow a lactobacillus culture to kettle sour this pale wheat beer, dropping the pH from close to 5 down to a grapefruit like pH of 3.25. With a firm lactic acid presence, the Berliner styled Weisse ale is simple and approachable, often dressed up with a sweet woodruff syrup but perfectly enjoyable on its own. Like drinking a cold and carbonated glass of lemonade, Tower 23 is tart and sour, with a lemony-citric fruit sharpness with little hop bitterness, perfect and quenching on a hot summer day.
