CHARLESTON, S.C. — Virgil Kaine Ginger Infused Bourbon, together with River Dog Brewing Co., announced the launch of a collaborative craft microbrew, Virgil’s Boxcar Saison. This new beer will make its official debut as part of Virgil Kaine’s prominent presence at the highly anticipated Music to Your Mouth culinary festival, Nov. 18-23, at Palmetto Bluff in Bluffton, S.C. David Szlam, creator of Charleston-based Virgil Kaine spirits, worked closely with Dan Baker, brewmaster at River Dog Brewing Co. in Ridgeland, S.C., to craft a saison like no other. The process began with a selection of pale, biscuit and Vienna malts from Belgium combined with sterling hops, French saison yeast and more than 100 pounds of Belgian candy sugar. During fermentation, Virgil Kaine Ginger Infused Bourbon bill — a mash of corn, rye and malt macerated with fresh yellow Hawaiian ginger grown locally on Johns Island — was suspended in the beer tank. Finally, the saison will move to another tank to mature over oak spirals, where it will remain until its release at Music to Your Mouth’s ever-popular Culinary Festival Nov. 22.
