Release #1 of our new sour program. Our first ever beer hitting bottles and being released exclusively out of our taproom, in wax dipped 750ml bottles. We began this barrel project with a blonde wheat beer, fermented with our house yeast, in stainless. After primary fermentation, we transferred the beer to the barrels where Funky Operator was aged; our natural/spontaneous fermented sour oatmeal stout. After six months in the barrel, we added peaches and apricots along with some additional lactobacillus for some more tartness and funk. After six more months of aging in the barrels, we pulled the beer off of the wood, and back into the tank for bottling. What we created, is a refreshing, perfectly balanced sour blonde. With some sour notes and funk on the nose, the beer starts off tart, with a mellow sourness and saltiness to finish on the pallet. Nuances of fresh orchard fruits balance out the tartness with a lingering flavor of fresh apricots. 5.2% ABV
