For our take on hefeweizen, we devised a recipe that takes 70% wheat and 30% pilsner malt, plus a moderate dose of Saaz; a traditional German hop. The yeast exudes notes of apricot and tangerine, and of course a good bit of clove, but with minimal banana flavor. A perfect beer for summertime drinking in Virginia!
