Using the base recipe of Ill Padrino, our Belgian-style quadrupel, we fermented this beer with a blend of our house Belgian yeast strain, brettanomyces, and bacteria in our open fermenters. We then aged them in miscellaneous second use whiskey barrels for 10 months creating the "Grand Cru" version of Ill Padrino.
Notes of sour cherry and plum are accentuated by subtle notes of whiskey while soft flavors of oak round out the finish of this complex beer.
