An experimental beer featuring Tivoli Road Bakery's sourdough culture. The beer was fermented in French-oak fortified wine barrels with active wheat and rye levain (rather than brewers yeast) before extended maturation on oak with our in-house mixed culture of wild yeast and bacteria. Expect apple, grape and apricot. It's yeasty, mildly acidic and very winey. Unfiltered and bottle conditioned beer with flavour evolution.
