For our latest limited release IPA we've continued to look at new ways to accentuate the soft fruit character of our favourite hop varieties. The grist includes flaked oats and wheat for mouthfeel and balance the water profile. We sought to reduce the bitterness pick up from out whirlpool hops by dropping the temperature at addition further which minimises isomerisation. We then selected our favourite headline US varieties Amarillo, Citra, Mosaic and Simcoe. Expect classic citrus fruit with underlying apricot, peach and subtle pine notes.
