While developing Summit Unchained 26: Westie 7th, its name a nod to our St. Paul brewery’s neighborhood, Brewer Nick Hempfer discovered the delicious world of Belgian Candi Syrups — an ingredient he used to boost this beer’s booze content and give it rich notes of dark fruit, dark caramel, and rum, rum, rummy-rummy rum. Specialty malts support these flavors, and subtle noble-style hops lie back to let the candi syrup shine. Finished with a Trappist-Style Ale yeast, you can expect traces of fig and raisin to round out the beer.
