To celebrate the harvest season in Iowa, we brewed a “harvest beer” made with whole-cone Mosaic hops harvested just 24 hours prior to brewing and shipped “wet” (not kiln-dried as usual) overnight from the Yakima Valley in Washington. We kept the malt bill simple to accentuate the hoppy goodness, choosing mostly 2-Row American barley malt with a little honey malt and carapils. Centennial and Nugget hops were added early in the boil for bittering. Most of the fresh Mosaic hops were saved for the whirlpool where they add a distinctive citrus and grapefruit flavor and aroma that are sure to make this brew a sensation, especially with the legions of IPA lovers. Brewed fresh to be enjoyed fresh, be sure to get some while it lasts.
