This tart berliner weisse is soured in our brew kettle for 18 hours with lactobacillus from an addition of live culture yogurt. It was boiled with minimal hops to pasteurize and then fermented clean with a clean ale yeast. This version was infused with Kiwi and is facing off vs. the Pear version.
