
For this collab with Ron from Jolly Pumpkin, we decided to play to both of our strengths in creating tasty Belgian and farmhouse style beers, but with a modern twist. The complexity of the malt bill really shines with layers of biscuit and spice, even though the beer finishes quite dry. Citra and Mosaic were employed in the whirlpool and dry hop to give the beer a more modern interpretation with hints of pineapple and papaya accentuating the fruity characters of the yeast.
