When we set out to brew new beers there is often a goal in mind. We have a concept or idea that we want to achieve. Sometimes it is something traditional and sometimes it is way out there and unique. This is the later. We brewed this sour to resemble a tropical smoothie or creamsicle. After sour mashing for two days to achieve a tart finish, we added a big addition of lactose sugar to the boil for mouthfeel and creaminess and small amount of citrusy, orange forward summit hops. Post fermentation we refermented the beer on over 10 lb per barrel of pineapple and mango purée. It’s tart, creamy, tropical and super drinkable!
