Inspired by the sour beers of Belgium, made right here in Los Ranchos de Albuquerque, this beer has been developing in a mix of red and white wine barrels before being bottle conditioned and sent into the wild. Refermented in the barrel with a mixed culture of bacterias and brettanomyces, the beer has a bright, tart acidity, pleasant funk and a healthy dose of oak providing vanilla notes to round things out. All this comes together to produce a clean but complex wood-aged sour.
