This traditional German brew originates from the city of Goslar which is known for the natural saltiness of its water. In our interpretation of this German classic, we used gulf salt from our friends over at Gulf Coast Salt Works. The resurrection of this antiquated style offers a new array of unique flavors. Tart and salty. Fruity and spicy. A low pH during fermentation allows the yeast to create unusual esters reminiscent of apricots and peaches while a spicy undertone comes through from the addition of coriander to the whirlpool. We hope you enjoy this liquid trip back in time.
