2 Turtle Doves is the second in the 12 Days/Years of Christmas Series. We decided to take our inspiration from the name and base the beer on the "turtle" candy, brewing it with cocoa nibs, toasted pecans, caramelized sugar and a lot of caramel malts. Somewhere between a Belgian-style Dark Strong Ale and an Imperial Porter, this beer is designed to take the journey through time until 12 Drummers Drumming.

40% Belgian-style Quad Ale aged in brandy barrels with dates and currants added, 60% Belgian-style Dubbel Ale.

Atomic Ale will soon be sharing with you one of the newest beer genres. Brewed with wheat and pale malt, this White IPA exhibits beautiful citrus aromas from its Northwest hops that blend well with the esters of the yeast. The beer pours with a cloudy pale yellow color. Imagine a “Hopped-Up Belgian White” that is so well balanced that it is both thirst quenching and complex.

Our original India Pale recipe was changed in 2007 when Dave and Jaime Tenny of Coast Brewing successfully campaigned to raise the alcohol level allowed in beer sold in South Carolina.

To celebrate the 2009 holidays, we made a special batch of our Tripel. Featuring a new Pilsner malt, we also changed the hops to help profile the soft Pilsner flavors and aromas. All bottles were sold with a customized To and From label. This example is just one way the bottles were labeled. We even had a couple of bottles leave from Santa!

Barleywines are generally the strongest style of ale, with an alcohol content to rival most wines. In fact, it is this high alcohol content coupled with extensive aging which contributes to the very complex nature of our Blunderbuss. A beverage such as this is meant to be savored and appreciated much like a fine brandy or cognac, or, in the world of wine, a fortified sherry or vintage port. (But a barleywine is all beer!) The process of creating our barleywine began by cramming our mash tun to overflowing with American and Scottish pale malts. We then extracted only the richest first runnings from the mash and boiled extensively to further concentrate the sugars in the wort. During the boil a touch of honey was added to the kettle, along with six varieties of hops to provide balance for the sweet malt. Fermented in stainless it was then sent to the CBC Barrel Cellar where it aged in a quintet of Buffalo Trace rye barrels (previously used for aging a strong beer named Utopias, brewed by our neighbors in J.P.). The result is well worth this painstaking ordeal. A creamy, pale tan head rests atop this beautiful, hazy golden liquid. Captured within the rim of a snifter, the first aromas to greet the nose are of alcohol’s fruity esters, then rich caramel, and sweet malt. As it warms, more distinguishable notes of burnt sugar and toffee, vanilla, coconut and oak are detectable. The flavor more than meets the prelude of aromas. Its rich, full body contains notes of sweet caramel, tart flavors of berries and dried fruit, and a subtle herbal hoppiness. This is finished by warming alcohol and a lingering finish with hints of vanilla, coconut, toasted marshmallow and oak. This ultimate after-dinner drink pairs well with many desserts, but is also certainly a dessert in and of itself. CHEERS!

Our 2011 Bourbon Pale aged for over 10 months in Blanton's barrels with Brett F. A huge bourbon aroma, and gripping oaky tannins are the mainstay of this brew, with hints of fruity Brett and acidity in the finish.

This beer changes year to year depending on what we could find in the cabinet. This year is no different, with our brewery box of random spices harboring some cinnamon sticks, and whole nutmeg. We were also fortunate enough to have Chef Jessica Christensen from City Tavern come down to brew with us. She brought us a gift of some beautiful black cardamom to round out the spicing. The finished beer is brown ale with light spicing.

Blushing Monk is brewed with a ridiculous amount of raspberries and with a Belgian yeast strain that keeps our head cellar operator from sleeping for a week. It pours a stunning deep berry red and, at 9.2% ABV, has a surprising kick.

Farmhouse ale lagered on house cultures. We realize this isn't really a thing, but then again neither should 2017.
