We brewed this beer to celebrate Rice's Centennial. This beer has the ultimate secret ingredient: trees from Rice's campus. We called up the tree team at Rice & recalimed wood from the Live Oaks around campus, then aged this beer on them. It's a Red Ale base (in honor of Rassul's dorm), with rice hulls in the mash and centennial hops in the boil. Hop-forward citrusy nose, with the oak's tannins & vanilla notes rounding out the mouthfeel and finishing strong.

1920 Cognac Stout Imperiale

Like the Franco-Belgian Military Accord of 1920, this beer unites a Belgian-style Imperial Stout and one-year aging in a French Cognac oak foudre, coalescing into inviting aromas of dark roast coffee & dark chocolate, cognac, black cherries, wood and hints of molasses, homemade licorice and slight smoke, followed by welcoming favors of espresso roast coffee, prominent dark chocolate & black cherries, plums, French oak tannins and cognac. Hop bitterness, aromas and flavors are not readily perceived but provide back stage structure to balance the roast malts and oak tannins. The pleasant, medium body, gentle warming and dry finish of this opaque/black imperial stout perfectly suits it for a snifter on a cold, midwestern night.

Our first Anniversary Ale was brewed with hundreds of pounds of locally grown blood oranges. This monster beer also clocked in at 9% alcohol. The blood oranges added an interesting grapefruit aroma and flavor along with a pleasant bitterness. Brewed once in 2009 and perhaps never again. The idea for this brew came from owner Ben Cook's original attempts at crafting the Orange Wheat beer as a homebrewer. The first attempt came out with way too much alcohol, but after an extended aging tasted great. The same extra alcohol and extended aging were brewed (on purpose) into the IBOW.
