Stumpy Ridge Stout

The Little Goose Fire of 2007 claimed much of Stumpy Ridge, turning the once majestic canyon the same color as this Black Ale. While unlikely to find the caramel, chocolate, and coffee flavors this beer imparts, one can only imagine this beer’s dry roast bitterness in the aftermath of such an event. Lift a glass and “toast” the brave men and women who battled and ultimately defeated this wildfire.

Sucaba

Confoundingly unpronounceable yet eminently drinkable—welcome to §ucaba, an epic barrel-aged English barley wine whose original name was undone by a two‐bit legal challenge. Big, boozy bourbon and American oak aromas combine with soft chocolate malty undertones. Complex malt flavors are framed in oak with hints of dark chocolate, vanilla, tobacco, coconut and just a touch of dark cherry. §ucaba is built to last and can age for years to come (we recommend counting the years with an abacus).

Sucré

The traditional sixth anniversary gift is candy or sugar, so we’ve named our 6th anniversary ale “Sucré” which is “sugar” in French. Sucré is our sixth anniversary ale, loosely brewed in the English-style Old Ale tradition using our house Belgian yeast strain and then blended using the solera method. A portion of each of our anniversary ales is saved in our barrels and blended in with the next year’s production, providing more complexity and depth of character that comes with age. Layered with complex flavors of dark fruit, vanilla, oak, and burnt sugar, Sucré is a robust ale, surely the perfect beer to mark this major milestone. Multiple barrel aged variations of Sucré exist. Bourbon barrel, Rye barrel, Rum barrel, Tequila barrel, Port barrel, Madeira barrel, New American Oak barrel and New French Oak barrel. Only the bourbon barrel variety was produced using the Solera method.

Suede

When Parisi and Stone brewmaster Mitch Steele decided to collaborate, it was essential that they tap a special individual to complete their triad of fermentation domination, and they found just that in Tonya Cornett, the brewmaster at Bend, Oregon's 10 Barrel Brewing Company. Together, they decided on a sturdy yet velvety base of imperial porter and developed a plan to celebrate the bounty of the environs in which it was produced by harvesting avocado honey, jasmine and calendula flowers (some from our very own Stone Farms) and infusing them into the beer to create something complex and uniquely Southern Californian. Consider it craft cross-pollination at its finest.

Suffragette Pale Ale

In the brewing tradition there’s a technique called Burtonizing – it involves the addition of specific salts to the brewing water to create water similar to what is found in Burton on Trent. Burton on Trent is one of those mystical places in the lore of brewing, when the brewers there tried to replicate the London pale ales of the day they found that their water was particularly well suited. Not content to copy, they went on to create the IPA and perfect the British version there. Thanks to our unique water, we are able to heavily Burtonize our water and create beers in that classic British style. Suffragette explodes with pine and resin flavors, a solid bitter holds the beer together while a hint of sulfur from the Burtonization completes the profile. We created a beer that straddles the classic British Pale and the IPA so we call it a Burtonized Pale Ale – at 5.8% it’s an easy drinking beer with a full flavor and body.
