Caution! This is an intensely smokey lager similar to those found in Bamberg, Germany. Most of this brew’s malt was dried over flaming beechwood, which ingrains unique smokey flavors. A large proportion of Munich malts were used to create a Fest style beer with amber hue. We used specially smoked barley from Valley Malt. Prost!

Smoked Porter - Chipotle Peppers

In 2006, Chris Carroll, a longtime member of Team Stone, took that adage literally, proposing that we produce a one-off version of our venerable Stone Smoked Porter made spicy from the addition of chipotle peppers. We gave it a shot and found that those smoked jalapeños melded quite naturally with the smoldery peat-smoked malt that gives the beer its flavor and moniker, creating a deep, roasty quaff with a carefully restrained tingle of tasteful capsaicin heat in the finish. The marriage of ingredients was so nice that it has become an annual summertime staple, released each May in honor of Carroll’s initial idea that Stone Smoked Porter w/Chipotle Peppers serve as an artisanal alternative to the industrialized adjunct-laden cerveza billed as the perfect fluid accompaniment to the sunny season. Cheers to variety and a quality alternative to mediocrity.

The brain child of local homebrewer Kyle Manns (now the lead brewer at TAPS), we liked his version of this beer so much we decided to brew it as our Pro-Am entry for the 2009 Great American Beer Festival. At base a 9.5% ABV Belgian strong pale ale, cardomom, ginger, juniper berries, and coriander are added to the party, along with fresh lemon, orange, grapefruit and tangerine zests. After fermentation, the already complex concoction was aged on oak cubes to add one more layer of flavor. But words don’t do it justice; this beer truly has to be tasted to be understood.

Solstice D'été Aux Framboises

German inspired sour wheat beer. The obvious and domineering acidity of this beer is obtained by letting the unboiled wort go sour for several days. The Solstice d’Été is made complete by the addition, during the fermentation process, of a phenomenal quantity of whole fruit (raspberries or mangos or cherries) which compensate for the sourness of the beer. The result is a very refreshing beer where both acidity and fruity flavours dominate wholeheartedly.

Sonoma Pride Dauenhauer

Brewed and bottled to a moderate strength of 6% ABV, Dauenhauer is a copper colored well hopped domesticated wild ale (but not an IPA). Compared to its more delicate sister beer Amasa, Dauenhauer is darker and exhibits more hop character in both the aroma and flavor. It can be consumed now, or aged. The use of Brettanomyces yeast in the bottle conditioning process lends a rustic characteristic to the beer. If aged, many of the unique yeast qualities in the beer will become even more evident.

Sour in the Rye is an American wild ale. A challenging beer to brew due to the substantial amount of rye malt, but you’ll be glad we took the time. We've all come to know and love our barrel-aged sour rye ale, Sour in the Rye. Now it's time to enjoy a bright variation of it that has kumquats added to the mix. Not only is "kumquat" one of the most fun fruit names to roll off the tongue, it also treats the entire palate to a unique display of fruity characteristics. The tart, sweet, citrus and tropical notes of both the kumquats and tangerine zest strike a balance with the honey, vanilla and woody character imparted from barrel-aging. At the same time, the unique bitterness of the citrus fruit locks step with the clove and pepper notes imparted from the rye.

Blended Sour Ale aged in oak wine barrels. We began our sour ale project in 2006 with only four oak barrels previously used to store red wine. The number has grown over the years, along with the amount of sour ale we’ve brewed. Each barrel develops unique characteristics as it ferments independently, and just as Belgian brewers have been doing for centuries, we sought out our favorite barrels, ranging in age from one to three years old, for blending. By blending the sour ale from these barrels together in various amounts, we created in this bottle a live harmony of tartness, fruitiness and layers of flavor that can never be replicated. We hope you enjoy it with friends, whenever and wherever.
