A portion of each of our anniversary ales is saved in our barrels and blended in with the next year’s production, providing more complexity and depth of character that comes with age. If you’re anything like me, there were certain days you’d look forward to every month when the school hot-lunch calendar was released. Days that stood head and shoulders above the rest. The days when your absolute favorite cafeteria item was being served. Whether your food of choice be chicken fingers, tacos, pizza, french toast sticks, cheeseburgers, or country fried steak, those days were the best of all the days. The days when you could feel the electricity in the air as the seconds passed before the lunch bell would ring. With those memories in mind, we hope to elicit the same feeling of excitement with our newest brew: Taco Day. Taco Day is a 6.7% strong pale ale of the single hop varietal. We used an experimental hop from the Pacific Northwest. This beer has a subtle, floral taste with notes of berries in the aroma.

Tart of Darkness is a traditional stout that we aged in used oak barrels from The Bruery that had previously housed beers such as Cuivre™ or Black Tuesday®. We then brought them over to Bruery Terreux, added our special blend of souring bacterias and wild yeasts and watched nature take its course. The result is a perfectly tart yet awesomely dark and roasty, sour stout. Not a style you will see very often, and in our opinion, not a style seen often enough. This unique stout has notes of tart plums, roasted coffee, vanilla and oak.

The Asheville area is a brewing hotspot nestled in the mountains of North Carolina. Tater Ridge was brewed by something of a craft beer super group made up of members of the Asheville Brewers Alliance. We’re fortunate to call these passionate and talented brewers our neighbors, and we hope this unique ale will be the first of many collaborations to come. We’ve made plenty of new friends in the nearly 30-strong Asheville Brewers Alliance (ABA) since we started brewing in North Carolina. Two of whom—John Stuart of Green Man Brewery and Luke Dickinson of Wicked Weed Brewing—led this collaboration recipe and work tirelessly to bring creativity and a deep-seated love of locally made craft beer to the Appalachian Mountains.

The Beacon

Calfkiller and Yazoo brewed this beer with some German oak smoked wheat malt, local TN honey, and some in-house Calfkiller-roasted coffee. It's fermented with Calfkiller's house ale yeast and unfiltered. The nose is fresh, clean and slightly flowery. The smoked wheat shows up in the beginning of the first sip, followed by a herbal, earthy body but finishing dry and only slightly sweet.
