A Belgian Style Red Pale Ale.

Brown sour oak aged with fresh figs, it presents aromas of brown sugar, tobacco and caramel apples. Flavors of fresh fig are given depth with woodsy, cedar-like character that precedes a bright, snappily acidic finish. 7.2%ABV

Merrang! is a pastry Berliner inspired by lemon meringue pie, with lemons, Mexican vanilla, milk sugar, and graham crackers. Take a sip and feel like there's pie in your mouth!

This 100% Winesap cider was fermented and macerated on skins for maximum tannin extraction. We then aged it in oak barrels for 12 months to allow the apple tannin to blend seamlessly in with the oak tannins.

“Got anything light?” For 18 years our Brewmaster has always answered this question with, “We don’t make shitty light beer”. And we never did. Then someone said that we couldn’t do it. Well that was a challenge, and when it comes to beer, we love challenges. How did we take the traditional American Light Mega-Lager and make it better? Easy. We made it fresher. For starters, we use fresh local ingredients. Unlike the others, this isn’t pasteurized either. This allows the pure clean flavor to shine through. We use a single strain of clean lager yeast and cold ferment it. Good water helps too, and La Crosse has some of the best water in the best beer state in the country. This is Craft American Lager.

PB&J Imperial Stout.

A sturdy malt backbone is built on top of first-class German Pilsner Malt and American 2-Row barley. A pinch of German Magnum hops followed by later helpings of CA Saaz provide a pleasant lemony citrus bitterness. Crystal clear gold in color and with a firm white foamy head, at 4.8% ABV and 18 IBUs you can be assured this beer is refreshing and easy drinking and is the result of this foray into our take on this classic style.

A classic IPA that showcases the nuances and balance that put the IPA on the map. Made using the perfect combination of American & English Pale Malts for a gorgeous copper color & solid malt-backbone, finely balanced with wonderful flowery, citrus and herbal hop aromas & flavor from the skillful use of a variety of "C" hops. This award-winning IPA is “old skool” baby and in our castle, it’s the Lord of the Ales!

Unicorn Fuel is a fully dry cider infused with Rose Hips and Hibiscus. The deep pink hue comes primarily from the organic Hibiscus used in the infusion, with the Rose Hips offering more of an orange tint. The Flavor profile is subtle, the Hibiscus offers a rich, mellow flavor and aroma while the Rose Hips bring stronger hints of citrus and acidity.

Our Traditional Hard Cider blended with a touch of mango for that tropical flavor just in time for the summer’s heat.

We teamed up with our friends at Collective Brewing Project to create Minor Miner Grisette, a grisette-style ale aged in oak foeders with orange blossom and calendula flowers, inspired by traditional grisette beers enjoyed by industrial miners after a long day of labor. Though the environment of beer consumption has changed, this easy-to-drink beer still hits the spot when looking for a refreshing beer at the end of the day.

Our J. Wakefield collaboration brewed at the Dojo, this Imperial Stout consists of Maris Otter base, with a wide variety of specialty malts to support it. 10 lbs/bbl Coconut, 2 lbs/bbl Black House Coffee, and a hint of Vanilla we're added post fermentation and makes this beer taste like you just took a bite out of a Samoa cookie. The aromatics from the coffee come off strong on the nose, with a subtle roasty, chocolate and coconut lingering in the background.
