Occidental's take on the lager style that changed the beer world forever, this is a largely Bohemian-style pilsner with a bit of Bavarian pedigree. Crisp, clean, and dry, Czech Saaz hops crown this beautiful beer.

This week Chad gives us an experimental Pale Ale he’s made called Boiler Hater. No hops were added during the boil on this one, only mash hop and dry hop additions. Coming in at 5.8% ABV and 48 IBUs it’ll be a refreshing way to get out of this BOILING heat.

Boiler Room is a light bodied but surprisingly flavored sour wheat beer. This is the base beer, but we added Brettanomyces and Raspberry to make a sour, tart yet sweet and refreshing beer.

Dry stout aged in bourbon barrels A collaboration with our friends at Legal Sea Foods, and a logical extension of their private label bourbon program. Having selected single barrels of bourbon which were then bottled for exclusive use at Legal Sea Foods restaurants, the empty barrels were shared with us here at CBC in order to produce this beer. This Dry Stout was crafted from roasted barley and oats plus pale, chocolate, and amber malts from the Fawcett Maltings in Yorkshire, England. Gently hopped with English Fuggles hops, after fermentation it was laid to rest for four months in a dozen oak barrels which had previously held bourbon from Buffalo Trace distillery and others. The resulting beer offers an aroma of roasted cereals and hints of espresso with a touch of oak-derived vanillins. On the palate, Boilermaker Stout is very dry and quaffable with caramel and roasty notes balanced by flavors from the charred oak barrels, and a subtle hint of spirit lingering in its very smooth finish.

We welcome the autumn with the arrival of bock beer. Jopen 4-granen Bok (4-grain Bock) is a delicious ruby-red autumn seasonal beer. We add rye as an extra grain to the traditional Haarlem brewing grains of barley, oats and wheat. The result is a full-bodied roasted beer with toasty and fruity tones. Perfectly balanced.

The fifth release in our limited Legendary Series is inspired by a ghostly gang of thieves that made a name for themselves around Limburg. Riding winged goats through the night skies, the Bokkenrijders were notorious for robbing and pillaging the towns that lay before them. With stories as varied and ancient as these, a Doppelsticke Alt was called for. This secretive, lagered ale is delightfully complex, rich and malty, with a hoppy bite and smooth finish – perfect after a night of riding on the back of a buck.

This is an old ale/stock ale. Old ales are remnants of a period when most ales were strong and somewhat dark. Today's versions are wide ranging. In general, however, they can be described as ales of higher than average strength that benefit greatly from some aging, are gently hopped and showcase a malt base.. Some are seasonal brews. Aging may be the key contributor to the character of old ale, as they can develop a complex profile with some oxidative or wine-like notes.

This Double Nut Brown Ale is brewed in honor of the popular Bolita games played in Ybor City, FL. Bolita means little ball, but the profits from the often rigged games were anything but little. A player would pick a number and hope that his bolita came up, while the game operator would employ a variety of tricks to ensure it didn't. There are no tricks in this brew though, just a high gravity brown ale redolent with caramel and toffee like malts and a long nutty finish. Pars well with Baklava, wild game and medium body cigars.
