Bocky came to us as 4,000 pounds of barley, largely from Weyermann maltings in Germany. While his initial transformation may have been complete by now, his suffering was yet to hit its climax. Martha slowly crushed him with a 6-roller mill and Dann mashed and decocted him expeditiously. He spent two hours letting gravity pull him into the brew kettle. Then Bocky was boiled and fed to the yeast. For six weeks, he lay there in his cold lagering tank, occasionally expelling gas and alcohol.

Bodega is an American Pale Ale brewed with an abundance of our favorite hops, and some unusual techniques to make those flavors shine. With remarkable harvests of Citra and Centennial hops from the Yakima Valley, it's no surprise we made up reasons to keep testing this recipe long after we had locked it. Sourcing the immensely sought-after Citra and Centennial hops has not been easy, so we take extreme care to ensure that our methods preserve the layers of exotic fruit flavors that evolve as the glass goes by. A bright body with white wheat lets those tropical notes come through, and finishes with quenching freshness.

This IPA gets its light silky texture from rolled oats. The flavor and aroma both express mandarin and citrus all around. Over five pounds of hops per barrel makes this IPA truly Bodhilicious. Gold medal winner in the American Style IPA category at the Great American Beer Festival in 2016!

Cranberry Herbed Cider

A fall seasonal brewed with cranberries giving this pale ale a subtle tart finish. Cranberries can only grow in a few parts of the world and lucky for us, NY State happens to be one of them. We used cranberries from a few of NY's best bogs to add a subtle tartness to this seasonal pale ale. The hops we use provide woody aromas & bitterness and the malt's sweetness keeps the acidity of the berries in check. We feel the Bog Smash is the perfect complement for the crisp outdoor weather we love to enjoy in the fall. Plus, it's super fun to yell "Bog Smash", so hope you enjoy!

Bog Water’s malt and yeast profile is that of a Belgian Dubbel, a very contemplative and complex ale. Wild harvested bog myrtle, an herb used in brewing extensively until the 1500s, was added to provide bitterness, a sweet aroma, and herbal spicy notes. The result is a beer style we can claim is truly our own, an Eastern Ontario Gruit.

Our pilsner lager is a golden, malt forward, Czech style beer. It contains Perl, Sazz, and Nelson Sauvin hops to give a crisp taste with a light, bitter finish. Brewed using traditional methods, Bohemia contains only water, malted barley, hops and yeast, with no artificial fillers, colours, or preservatives. At 4.5% ABV, it will provide a refreshing local alternative for lager drinkers. Food Pairings: Bohemia is a bubbly, light-hearted character who loves a good beach party, especially if there's a barbecue. As the name suggests, he is open minded about his company getting on well with a range of Italian, French and Irish dishes, especially those involving seafood or chicken. He once hooked up with a Mexican but said he didn't enjoy it.

Bohemian Dock Street Pilsner is brewed in the style of the original Pilsner beers of Bohemia, in what is now the Czech Republic, in a tradition that dates to 1842. We use costly Bohemian Saaz hops and pale imported malts to produce its rich golden color, and soft malty flavor using traditional techniques of the old world. True Pilsners are the most difficult to brew as there are no dark malts or flavorings used to mask flaws. Pilsner is the best known style of beer in the world. A good pilsner balances hops and malts to a refreshing, clean tasting, every-mood kind of beer. The Bohemian can stand alone or join a party easily.

While it may be difficult to fully appreciate outside of its homeland, the breadth and diversity of the Czech brewing tradition extends far beyond a certain Ur-lager. Hardywood Bohemian Pils gives a nod to the wonderfully fresh and complex unfiltered pale lagers being produced in the brewpubs of Prague. Brewed with an heirloom variety of floor-malted barley from the Czech Republic, Hardywood Bohemian Pils features a rich, bready maltiness balanced by smooth bitterness and spiciness from the exclusive use of Czech Saaz hops. A traditional Czech lager yeast strain ties the whole package together, creating a refreshingly clean yet characterful flavor profile with a crisp finish. Na zdraví!

Harpoon Bohemian Pilsner follows the age-old tradition of extended lagering to help produce a smooth yet complex beer. The blend of European malts is balanced with Tettnang and Saaz hops to create a slightly malty beer with a crisp finish.

Our rendition of a classic Czech style, Bohemian Pilsner is golden straw in color with a fluffy head. Accents of honey and biscuit compliment the clean, dry body. The addition of delicate Noble Hops gives the beer a soft, herbal and floral quality.

…and they asked, “Is Redwood Curtain capable of brewing a sessionable beer?” Dark straw in color, pillowy and frothy head, crisp aroma with shades of spice, a dry, yet crisp mouthfeel and typical Noble hop finish. Brewed with Weyermann Pilsner, Carabohemian and Carafoam malt, Northern Brewer and Sterling hops and a limited release Lager yeast strain.

The two time award-winning Bohemian Pilsner is the 2015 Silver medalist for both, the Great American Beer Festival, and the Great International Beer Festival. It is light straw to golden in color. A touch of Munich malt is added to give the beer a sweet caramel finish. It is smooth and crisp with a clean malty aroma. We use Saaz and Perle hops: providing a predominant peppery bitterness and spicy floral aroma. Bitterness is on the high end, but balanced well. We lager in cold storage for 30 days to help produce a smooth finish for this complex lager.
