Cafe du Cycle - Chicory IPA

If you've had a chance to sit down and sample a coffee at Cafe du Monde in New Orleans, you may be familiar with Chicory. You're probably not familiar with the Chicory IPA. The marriage of Acadian coffee (from BJava) and big American hops. No time like the present - FLAT TUESDAY at Flat 12. *Chicory is the root of the endive plant. The root of the plant is roasted and ground. It is added to the coffee to soften the bitter edge of the dark roasted coffee. It adds an almost chocolate flavor to the Cafe Au Lait served at Cafe Du Monde. *(CdM)

Cafe Noir

An Imperial Coffee Porter barrel aged 8 months in pinot noir barrels from the California Central Coast then cold infused with a blend of locally roasted coffee, hand selected by Tap It’s brewing team that was added just before bottling for the freshest of coffee flavors. We fermented this whack job of a beer at a slightly higher temperature to lend the warmth and mouth feel of a Hot Toddy. With the seasonal temperature changes of the 8 months of barrel aging, we believe this imperial porter gained the nuances of an Old Ale in some of its malt character and body.

Caffè Americano

Traditional Caffè Americano is made by adding water to espresso. We break all the rules with this Double Stout. We refuse to add water to our beer after fermentation, but have no issue adding beer to our espresso. This deep, dark stout exhibits rich espresso and coffee notes, which are contributed by the generous use of roasted barely and locally roasted espresso. That simply is not enough for us. We also add roasted, raw chocolate and a hint of vanilla to this big bodied stout. Then, just for fun, we age it in rum barrels. Dodge the red eye and take a shot of the dark.

Caged Alpha Monkey IPA

Watch out! This huge new IPA is coming at you ready to literally cram hops down your throat! This monster weighs in at a hefty 6.5% alc/vol, 65 IBUs and uses 4 different hop varieties, in whole leaf and pellet in 6 different additions. We use a healthy dose of Caramunich malt to give this beer a bright orange color and enough body to balance the hops. We use cutting edge hop varieties to create a crazy mix of pineapple, grapefruit and pine aromas that just screams American IPA. This awesome ale pairs well with other strong flavors such as aged natural cheeses, spicy sushi, curry, etc. Truly an IPA that sets a new standard for brewers and beer lovers on both coasts Cheers.

Calamity Jane was known for being a legendary shot. She had a wild side but was also known to be compassionate and kind. She loved her beer. We brewed a Wild Blond ale in her honor. California Ale

Telegraph California Ale is our flagship beer and is our interpretation of the unique ales that were commonly brewed up and down the West Coast in the 19th century. It is an unfiltered medium-bodied beer, with a rich amber color and a rocky, white head. The beer is crafted using domestic American ingredients and fermented with a unique yeast strain that accentuates the hoppy spiciness, while also imparting fruity and subtly tart flavors. The aromas are spicy and earthy, reminiscent of the rich agricultural valleys surrounding Santa Barbara. Bronze Medal Winner, 2006 Los Angeles International Beer Competition
