2014 Hibernal Dichotomous is a blend of young farmhouse ale and mature barrel-aged beer brewed with lavender, spearmint, and rosemary. The blend was then refermented with freshly pressed watermelon juice. Naturally occurring wild yeasts from the Texas Hill Country impart a sense of place to this unfiltered, unpasteurized, 100% bottle conditioned beer.

HIBERNATOR: Alaska’s long days in the summer reverse to long nights in the winter. In Anchorage, we enjoy 19.5-hour days by Summer Solstice and, yes, then 19.5-hour nights by Winter Solstice. This tends to bring out the “Hibernator” in most of us. This smoked double bock represents the slow, sluggish, sweet and smoky textures of a lazy winter evening. Comfort and girth in a glass.

Palisade dry hopped tart farmhouse ale with hibiscus.

Made from a blend of sweet and tart apples. We crafted this using Hibiscus flowers and fresh ginger. A light and tart cider that bursts with cranberry and lemon flavors. It finishes with a sweet, spicy softness.

Our version of an unusual, yet resurgent, beer style. It pays tribute to the pleasantly sour, slightly salty wheat beers that originated in Goslar and became popular in Leipzig, Germany around the late 1800’s. A great introductory sour beer, Hibiscus Gose receives coriander and sea salt during boiling, then we steep dried hibiscus flowers at the end to create a vibrant pink hue (really, though, it’s pink!). The result is a tangy, sweet and sour ale with a refreshing citrus character.
