Hickory Tree American Brown Ale

To date the most popular beer that I have is the Hickory Tree American Brown Ale. An a-typical American Brown that is darker, smokier, smoother, and keg emptier than all other brews. Perfectly balanced with WNC malt with a touch of Maris Otter for bread, and Chocolate + Black Patent for that grab you by the neck flavor. A thick head that sticks to the pint glass, disappearing as you pour another. Named after an area in Northeast Tennessee where my family settled long ago and where my father is buried in a small graveyard over looking the South Holston River and Mountains. Much like the people of Hickory Tree, this ABA will treat you well, as long as you respect it.

American Cream Ale – the forgotten craft beer. Traditionally, this ale’s profile could be summed up as a medium-bodied, pale straw looking, well-carbonated, low bitter beer. Our cream ale, Hickster, has a light biscuity aroma with a hint of citrus. It is pale-straw and slightly hazy in appearance, with a fluffy white head. This approachable craft beer has a biscuity malt sweetness followed by crisp cracked corn, finishing dry…just begging for another drink. The light corn flavor is directly attributed to the cracked corn we mash-in during the brewing processes. Hidden Hopyard: Volume 7

For the seventh installment in this limited hop series we introduced copious amounts of Amarillo, Motueka and Citra hops to both the kettle and dry-hop. We decided to go with a clean malt base that includes a British Lager Malt and great deal of Torrified Wheat. The resulting beer will display notes of lime zest in the nose accompanied by tropical fruit flavors and a moderately dry finish.

A beer that pays homage to a centuries-old tradition of combining new beer with aged “stock ales.” Freshly brewed beers of the day often were very smoky and bitter tasting, and were blended with older beer that had mellowed with age to produce more drinkable libations. This modern brew will showcase our brewers’ talents by blending a stock ale aged more than three months in oak foudres (large wooden fermentation vessels) with a fresh version of the same beer to create a perfect harmony spanning end to end on the taste spectrum.
