Here’s one for the hop heads. Our IPA (India Pale Ale) is all about the hops. We use more than 18 pounds of hops per batch. Look for a big hoppy nose of citrus, grapefruit and floral notes that comes from dry hopping with a variety of American hops. The flavor is of course hop driven but has a smooth malt backbone to keep things balanced. The body is light with a crisp, minerally finish that allows the bitterness to linger. This is the beer that will kick your mouth in the face. The carbonation and bitterness really help this beer to lift heavy foods off of the palate so try this with big flavors as it stands up to the best of them.
