A Long Island-style IPA. North American pale malt, Munich malt and light caramel malt support multiple healthy infusions of Cascade, Centennial, Chinook and Warrior hops.

Defined as "serving no practical purpose", the recipe for Otiose was developed during a rare break in the brewing schedule; a recipe we came up with to satisfy our own desires and nothing more. The result is a sour brown ale aged in oak barrels to which we added guava. Riddled with tropical notes which are balanced by it’s malty backbone, Otiose is a rich and decadent sour ale. 8.2%, Cellerable for up to 3 years.

The Otis is opaque and black in color with aromas of coffee and roasted malts, and flavors of bitter chocolate, roasted oats and grains with a slight hop finish.

The third release in our Global Warming series of serious saisons, we welcome the much anticipated fall with this full-flavored farmhouse ale brewed with pumpkins bought fresh from the farmer's market that morning. The cooler temperatures provide a brief respite from the sweltering South Texas heat, allowing us to reflect on seasons past, present and future. Look for "Pumkinsaurus Rex" and spiced one-off specialty versions throughout the fall.

Otter Summer is a crisp, clean, easy-drinking American Wheat beer. Brewed with 2-row malted barley & malted red wheat and fermented with a clean American Ale yeast strain. It is hopped with Cascade and Willamette hops for a subtile hop bitterness and flavor.

Earthy Maris Otter barley, a touch of freshly sliced lemongrass, and a secret blend of tropical, grassy hops. The perfect summertime quencher.

A south German style wheat ale. This beer is served traditionally cloudy due to the suspended yeast (hefe=yeast). Strong spicy clove flavors and light banana esters are characteristics of a different yeast strain we are trying.

A strong dark German style wheat bock. This wheat beer is estery like the hefeweizen, but bigger with more of everything.
