Overhead

Overhead is an American-style Imperial IPA. This beer is loaded with our favorite hops; Amarillo, Columbus, Centennial and Simcoe. It’s bittered with a gigantic charge of Columbus and Simcoe early in the kettle that is followed by several rounds of late kettle and whirlpool hops using Amarillo, Centennial and Simoce. In the end, Overhead is brewed with over 5 pounds of hops per barrel which includes two rounds of dry hopping to create a cascade of pine, resin and citrus hop flavors that consume your palate. Although we brew Overhead with the same imported Pilsner and light crystal malts as Head High and ferment it with our house ale strain to produce a dry crisp finish, this blend of different hops creates an entirely new experience all its own.

Ovila Belgian Golden Ale

This abbey ale is a collaboration between Sierra Nevada Brewing Co. and the monks, at the Abbey of New Clairvaux. Belgian inspired golden ales are noted for their devilish personalities, but there is nothing mischievous about this complex ale. It is brilliant golden and layered with notes of summery apple and pear and pepperv spice from the use of a traditional Belgian yeast strain. A portion of proceeds from this ale goes toward the restoration of the historic Santa Maria de Ovila chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery 1931 and planned use the stones for a castle even grander than his famous San Simeon. Although Hearst’s, plans crumbled. these historic stones will rise again in a California Cistercian abbey.

Ovni Ale

In 1902, one hundred feet of the Eiffel Tower had to be replaced after it was struck by an electrical discharge. Many believe the source of that surge was from a passing flying saucer. Ovni (flying saucer in French) Ale commemorates the great craftsmanship that went into repairing the tower. This French style bier de garde is made with the finest imported malt and hops. This beer has a substantial malt character with a mild hop bitterness. Ovni Ale pairs well with bouillabaisse, wild game and pasta.

OXCART

OXCART is a blend of 1, 2, and 3 year old beers made using malted barley, unmalted wheat, and oats. Each batch was made using a coolship and allowed to cool overnight. While cooling, airborne wild yeast and other microbes inoculate the wort and are eventually responsible for 100% of the fermentation. The beer is fermented and aged in neutral oak barrels for 1-3 years, then blended into the final product. It is bottle condition and can be cellared for decades. OXCART is the purest expression of our goals with Black Project, and is a beer so complex is it difficult to describe. Notes of peach, apricot, fresh hay, wild flower fields, tart berry. Spontaneous fermentation yields what I believe it extreme complexity and depth of flavor.

Oxymoron

Oxymoron - Black IPA is bittered with Magnum hops, flavor and aroma additions are Amarillo and Fuggles. The combination of these two hops provide a beer that can only be described as dank, in a surprisingly good way. The beer has a slight roastiness from the Midnight wheat that gives the beer its black color. The finish is a spicy earthiness from lots of Rye malt with a slight citrus tone.
