The taste of light wheat mingled with the harmony of tartness and tropical fruit coupled with salinity. Soured in our milk truck that sits adjacent to the brewery.

For this limited seasonal release we decided to take our Mosaic hop forward flagship IPA and add a great deal of passion fruit puree post fermentation. The resulting beer will provide you with a big juicy mouthfeel accompanied by tropical fruit and a firm hop bitterness in the finish.

Passion Fruit Hop Collector is a tart and tropically fragrant version of our Belgian IPA. Passion fruit's floral perfume mingles with the aromatics of Hop Collector's signature hops, Simcoe and Amarillo, to create a powerfully flavorful yet balanced beer. Spring forward with this fresh and exotic take on a uniquely hoppy Belgian brew.

A remarkably complex beer, Pastime pairs a murderers row of hops with a malty backbone to create a beer designed for food. It can stand alone when it needs to, but paired with strong sour flavors like Carolina BBQ or vinaigrette the lemon, orange and pineapple esters take over.

Pathos has a slightly burnt malt aroma. However it’s balanced on the sweet side with a massive chocolate profile that has hints of toffee and caramel. Moderate earthy hop aromas help guide the senses to the chocolate experience. The flavor is forward driven by chocolate and minor flavors of burnt, roasty malt characters. Because of the rich chocolate nature, the aftertaste is somewhat drier than actual but a lingering sweetness does carry out the finish. Moderate hop bitterness helps balance out the richness of the chocolate flavor allowing several dimensions of flavors to come through.

Patience is a virtue and we have practiced it well with this long-awaited ale. The complexity of our Imperial Stout has been greatly enhanced, thanks to 4 to 6 months of aging in Rogue Distillery whiskey barrels.
