The southwest wit beer starts off like most of our other Belgian inspired wheat beers we do that are made with 50% wheat & 50% malted barley but instead of dried sweet orange zest and coriander we use dried lime and lemon zest and cumin to give it a distinct southwestern taste and aroma while garnished with a lime wedge to complete this delicate citrusy smooth beer. Sah'tea

A modern update on a 9th century Finnish proto-beer. Brewed with rye, we caramelize the wort with white hot river rocks, then ferment it with a German Weizen yeast. In addition to juniper berries foraged directly from the Finnish country-side we added a sort of tea made with black tea, cardamom, cinnamon, ginger, cloves, and black pepper. The spicing is subtle and balanced and Sahtea is a highly-quaffable, truly-unique brew with a full-mouth feel. The Sah'tea was first brewed at our small brewery in the Rehoboth Beach brewpub.

Sahalie is the flagship brand of The Ale Apothecary, brewed year-round of malted barley & wheat and Goschie Farms Cascade Hops. Hop bitterness and acid produced by our house lactobacillus culture provide the balance to the malt and oak structure of the beer. She spends up to 1 year in our oak barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!). 
Our sensory experience is a tropical & citrus fruit nose of apricots, pineapple, and orange produced from yeast esters and hop oils. The palate is tart and pithy, combining earthy and herbal undertones that evolve as the beer warms & opens up within your glass.

SAHATI

SAHATI is our interpretation of traditional Finnish sahti. Starting with a 200-year old Engelmann spruce tree felled on brewery property, we created our own kuurna (an ancient Scandinavian lauter tun) to separate the wort from the grain during brewing. The bottom of the kuurna is layered with spruce branches; the needles act as a natural filter and impart resinous oils into the wort. The hollowed-out trunk of the tree also contributes spruce essence and structure from the raw wood. The beer is made of barley & rye malts along with a sparing addition of Goschie Farms Cascade hops and is brewed just a few times per year.
 SAHATI is in many ways the very definition of The Ale Apothecary, where complex flavors arrive from the very methods used for production…the result is the process impacts the flavor profile at least as much as the ingredients themselves. Our last batch of Sahati was bottled on 12/5/14. Until we get around to hollowing out our next log (30" diameter and 14' long), we won't be brewing Sahati.

Inspired by Finnish Sahti, a traditional rye ale brewed with juniper, our Sahti Ale is a hazy amber ale with a sturdy mouthfeel and a crisp and lively finnish. Saint Arnold 20th Anniversary Ale

For our 20th anniversary, we wanted to brew a beer that was both celebratory in nature and one that embodied our brewery. Much discussion went into what this beer would be. It should demonstrate our philosophy of balance, our love of malt, a generous but not palate wrecking amount of hops, and last but not least, showcase our house yeast. The determined goal: an elegant, complex barleywine. We are pleased with the results. The color is a deep burgundian brown with a tan, creamy head. The nose is spicy with malt and alcohol and an orange citrus hop note. Toffee and caramel flavors combine well with spice from a combination of the hops and the alcohol. The balance is perfect with the malt and hops tingling together in unison from start to finish. There is a slight lingering dry bitter that stays with you but this also complements the sweetness from the all malt grain bill that could easily have become cloying. On repeated tastes, and as the beer warms, a soft dark chocolate note starts to come forward adding to the interest of this beer. This beer is drinking very well today and should be exquisite on our 25th anniversary. We recommend aging cold for best results.

Saint Arnold Divine Reserve #10

English Barleywine Important: let this beer warm to at least 55° before enjoying. With most Divine Reserves, we mention that they should age well. With this one, we are recommending aging it. It should age for 5 to 10 years. This is best done cold. DR10 is a big, strong, spicy barleywine with malt and alcohol dominating and a pleasant hop finish. The aroma has malt and spice from the alcohol. It was brewed with 6 different malts plus brown sugar. Columbus hops were used for bittering and it was finished with US Goldings. It had a very high level of attenuation for this style of beer which is why the aging is so important.

Saint Arnold Divine Reserve #11

The color is deep amber with a light, creamy head. The nose starts off with a touch of citrus but then turns decidedly into peaches. The taste starts off with creamy malt resulting from the pale 2 row and caramel malts and Saint Arnold yeast. The hop bitter starts low then builds to a crescendo, but always maintains a balance even in its big finish. The hop flavor continues to be peaches, an interesting manifestation of the Columbus, Simcoe and Centennial hops. This is the first Divine Reserve that we have filtered. This decision was made to make the hop flavors brighter, plus it would have been a bottling nightmare with all the hop bits in it. This beer is best enjoyed at 45° or even a little warmer. Though the recipe and style indicate this beer to be enjoyed fresh, we expect this beer to develop interestingly over the years.

Important: let this beer warm to at least 50° before enjoying. This beer is black with some ruby highlights. The nose is full of pumpkin pie spices and some alcohol. There are notes of nutmeg, caraway and vanilla. The taste starts with chocolate malt with a hint of spice and rolls into a warm spicy alcohol taste which has the effect of creating the balance that usually comes from the hop bitter. There is some hop bitter on the finish, but not much. Overall, this beer finishes relatively dry for such a big beer. As it warms, the spices move forward in the taste and the chocolate moves to the finish. The pumpkin provides a pleasant undertone and a nice mouthfeel. The spices will probably fade some over time; they mellowed considerably while still in the fermenter. Imperial Pumpkin Stout
