Originally, the farmhouse brewers of Wallonia would produce a weak Saison beer for the workers and a stronger beer to be aged & sometimes blended – destined for the local taverns. This beer has a primary fermentation with a Saison yeast, then undergoes a secondary fermentation with a blend of Lactobacillus & Brettanomyces. The result is tart, crisp, slightly sour & incredibly refreshing.

A classic saison ambrée fermented in a combination of red wine and oak barrels.

A bottle conditioned Saison with a spicy and moderately hoppy profile true to the traditions of the farmhouse ales of Wallonia. A spiced saison with chamomile, rosemary and black pepper.

Saison Blanche is an ode to the hot summer season and to those who labor tirelessly towards an abundant harvest. With a peppery spiciness and a silky rich mouthfeel imparted by the yeast, this aromatic, golden farmhouse ale serves to refresh you on those long summer days.

In the spirit of traditional Belgian farmhouse ales, Saison Blue is brewed mostly from malted barley but with sizable contributions from regional ingredients (traditionally wheat, spelt, or buckwheat). In our case, we happen to use blue corn and blue agave nectar. It is then lightly dry-hopped with American and European hops for a bright, herbal and floral finish. To us, it represents a link between old-world brewing traditions and new-world processes and ingredients. At the end of the day, this beer is bone dry, light bodied and quite refreshing, but features a spicy, complex flavor and aroma profile.

Saison d’Ox is back! First on tap for the brewery’s grand opening and winner of a gold medal in the 2014 Virginia Craft Brewers Cup competition, Old Ox’s French is a pale, straw colored ale. It’s conditioned with sweet orange peel to complement the natural spiciness of the yeast. Saison d’Ox’s crisp flavor, dry finish, and effervescence are perfect for spring and summer!

This style is a Belgian wheat beer spiced with coriander and sweet orange peel. An unfiltered golden colored ale with a fruity trappist yeast. A crowd pleaser. Great beer to pick up your spirits after mowing the lawn. Or to get your head working better after a days work in the old cube farm.
