Snow Wit

A seven-hop lineup with a Belgian twist. You don’t need a magic mirror to see the lure of this beer. It’s brewed with seven varieties of experimental dwarf hops. These hops are so called because of their uncommon growing method—shorter hedgerows rather than tall trellis systems—that yields a denser heap of cones with unique flavors that diverge from their full-grown botanical counterparts. Each year new and different varieties are grown in this method, creating untried and exciting shifts in hop character.

Snowcat Coffee Stout

This winter brew is an ode to the colorful characters - The Midnight Marauders – that flatten snow in the wee hours, as they ascend without fear into the darkness. For them, we took some artisanal roasted local coffee and brewed it up in a stout made up of a complex blend of roasted malts. Use this ale in the AM or the PM, to get you through the winter months and don't forget to toast the snowcat drivers who craft the perfect corduroy for first tracks.

Snowdrop

This beer was brewed for spring. We wanted to achieve a balance of winter baking spice and sunny and floral flavours that spoke to the dynamic relationship between winter and summer in Canada. This is a very unusual beer. Black pepper is a classic saison spice and the use of the lemon, anise and chamomile were all additions based upon cask beers that we have done over the years that represented various seasons in my mind. This is a very lightly flavoured beer but one that is made up many different small flavours that weave together to make a truly unique flavour profile

Snowfield Winter 2011

This is our second season of the Snowfield. We made this year’s version based on previous batches, but changing things up to hit a new season. This winter, we pulled back on the crystal malts (don’t worry there’s still plenty in there!) to make the beer slightly less sweet. We increased the hopping rates slightly but still used 100% centennial (flavor and aroma). This produced a slightly more bitter and hop forward beer that is nicely balanced by the chocolaty, sweet malt backbone and higher alcohol %. A big, silky mouthfeel, perfect for something that would be considered a “winter warmer”.

Snowstorm

Much like snowflakes, no two Snowstorm beers are alike. Once a year, our brewmasters lock themselves in the testing room with a secret selection of fine malts and hops, only emerging when they've hit upon something truly extraordinary. Some of our past Snowstorm recipes, like Firebrick, proved so popular, we started brewing them year-round. Look for a special new batch of Snowstorm every season, available in November, December, and January or while supplies last.
