Solano

Solano is a chili beer made using Colorado grown, roasted Hatch chili peppers. The intent was to produce a chili beer whose focus was not on intense heat, but rather on the flavors and aromas of the wonderful roasted Hatch chili. There is a spiciness to this beer, but it only lingers for a moment. Solano melds the rich flavors of roasted chilis and American malts, resulting in a flavorful beer that is slightly spicy with just a hint of smokiness.

Soledad

Venezuelan rum barrels were delivered to Strangeways on the day of Gabriel García Márquez’s death, April 17, 2014. Known affectionately as Gabo, and of whom the Colombian president called “the greatest Colombian who ever lived”, we brewed a unique tribute beer to honor the life of this tremendous literary artist who wrote the Nobel Prize winning novel One Hundred Years of Solitude (Soledad means Solitude). Under no established style guidelines, Soledad was crafted entirely with South American cuisine in mind, and everything from the fruits to the yeast were specially chosen based on traditional recipes from the continent. Colombian bananas, toasted coconut, Piloncillo raw cane sugar, passion fruit, mamey sapote, and fresh mangoes were all used in the process, and the elixir went through nearly half a year of aging on Venezualan rum barrels. The rich taste is fruity and tropical with touches of hoppy citrus and spice, complemented with mysterious shadows of coconut and chocolate and, of course, rum!

Soleil French Saison

Soleil is our take on the Saison style of beer. The history of the Saison dates back to the 19th century in the French-speaking regions of Southern Belgium. Beer was brewed at farms during the winter months to hydrate thirsty farmhands ("les saisonniers") during the summer months. While these beers were historically very different from one another depending on where they were brewed, modern Saisons are typically modeled after the Saison Dupont, brewed by Brasserie Dupont in Belgium, which gets its unique flavor from a special yeast strain. Soleil has a characteristic spicy/fruity ester profile resulting from our special yeast strain and a small amount of dry hopping. The extraordinarily attenuative yeast gives a beer with a dry finish and silky mouthfeel. As always, Soleil is brewed with twenty five percent local grain from Valley Malt.

Soleless

The saison is all about the yeast strain. This ale consists of pale malt, munich malt, wheat and oats. It is fermented warm to ensure the yeast gives off the fruity and spiced characteristics that saisons are known for. A great beer to be consumed when it is hot outside, Soleless isn’t your dad’s lawnmower beer.

Solenna

Solenna pairs the fruitiness of a traditional Belgian yeast strain with the subtle spicy character of Brettanomyces and the floral notes of German hops. Notes of candy apple, cinnamon and fresh-cut grass give way to a dry finish and firm lingering bitterness.

Solera

An everyday drinking beer, borne out of a Wildly different concept An everyday drinking beer, borne out of a Wildly different concept. Using our own version of a Solera aging system (most commonly associated with Sherry, Madeira, Port and other fortified wines), we’re creating a unique blended beer. Although this Saison has had the same love and affection found in our most sought after barrel-aged beers, it has the simplicity and drinkability of a more sessionable beer. Blending a young crisp beer and barrel-aged beer gives a long, distinct, authentic Wild Beer Co finish. This is a rustic spicy Saison with a barrel-aged aspect, funky yeast complexity, crisp yet round grainy fullness from local spelt and a European resinous hop character.

Solitaire

Our 2012 Replicale submission to the Illinois Craft Brewers Guild. This year, 15 Illinois breweries made a similar base beer, each choosing a different Belgian ale yeast for fermentation. The yeast we chose is clean, with good ester fruitiness and a lightly tart complexity. It is light-medium bodied with a dry finish and medium hop bitterness, and at 4.7%, it is a refreshing and sessionable Belgian-style ale.

Solitude

Solitude was inspired by the cold days of late winter and early spring on the coast, when the ocean temperatures keep a chill in the night air almost into early summer. A big dark beer that is comforting on a cold night, but with hints of dark fruits and a smoothness that suggests the coming of warmer weather, Solitude is a traditional dark strong fermented with our house Belgian yeast. Deep ruby reds highlight its dark color, and Belgian candi sugars add flavors of dark cherries and plums, complementing the subtle esters familiar to the style.

Solstice

The solstice heralds in summer. Solstice Weiss is gently brewed, in the time honored tradition, using 60% malted wheat and a triple fermentation. This is a true Bavarian style Weiss bier. “Weiss” means white in Bavaria, which refers to the yeast that remains in our unfiltered bier. Note the brilliant white froth and subdued golden hue. Expect this bier to have a soft champagne like quality, complemented by a wheat character that sparkles with fruity tones. We hope you enjoy our refreshing offering to soothe the summer’s heat.
