Fiery Hell

Simply put, this is Surly Hell aged on red oak with the addition of puya chiles. The red oak comes in the form of pieces of oak that have been drilled out in a “honeycomb” pattern to maximize surface area. This adds a warm oak note similar to what you’d find in a freshly toasted barrel. Puya chiles are a Mexican varietal, similar to guajillo but hotter. They have “a light fruity flavor profile, with licorice and cherry undertones that brings to mind wild berries.” CHILE ADDITION: We add actual dried chiles, not an extract HEAT LEVEL: Definitely present and leaning towards warming. Chiles can be difficult to integrate into beer, but this captures both a pleasant heat and the distinctive flavors of the chile. It is very easy to either overwhelm the beer with capsicum heat or go the other direction and become unnoticeable except in name. The name pretty much says it all. Hell can get hot, yo.

Guardsman

The first new ale brewed in Windsor for more than 80 years and launched on St George’s Day 2010. This beer is a classic English Best Bitter, brewed with premium floor malted Maris Otter and traditional whole leaf hops including Fuggles and Goldings. The result is a lovely copper- coloured session strength ale with a tangy taste. The distinctive hop aroma is derived from use of both late hop additions and also a hop-back.

9326 Pale Ale

This version of American Pale Ale is brewed with three hop varieties, a basic 2 row and a touch of crystal malt that provides a nice light copper color and a great malt character. Apollo hops were used for bittering with experimental 9326 hops used for the late kettle additions. Experimental 9326 hops were used in the conditioning and bright tanks as a dry hop leading to a very forward citrus/grapefruit hop aroma and flavor. At 36IBU’s and an ABV of 5.0%, this is ale is similar to our flagship beer Katy Trail but with a lot more dry hop character!

Green Chili Ale

This ale has 50lbs of Anaheim chile peppers which are added during the primary fermentation that ends up adding a great chile flavor. In addition, we add 2lbs of Serrano chile peppers along with the Anahiems just to give it a touch of “heat”. A basic 2-row base malt plus a slight touch of crystal malt give this beer its color which doesn’t impart much flavor. This beer is unlike anything else we have on tap and has a huge following. With a lighter body, 5.7% ABV and 29 IBU’s, this beer has become a classic here at the pub that people can’t seem to get enough of. Also, try it with tomato juice as a “liquid enchilada” for a little bit of a twist!
