Hopricot Ale

This is a Golden Ale that was infused with 30gals of apricot puree. Lightly dosed with Crystal hops during the boil and a combination of Crystal, Citra and EKG hops for dry hopping. This is a very sessional brew with an amazing aroma and flavor of apricots with a subtle citrus/earthy undertone from the dry hops that finishes crisp and dry without being to sweet. At 5.0% ABV and 12 BU’s this a great choice to help beat that summer heat and is sure to quench your thirst!!

Idahop #7

Normally the standard Idaho #7 hop flavor shines with pine, stone fruit, and predominantly herbal character. Tea-like, some citrus, floral and peach or white grape aroma. But, this, is different. The lupulin has been captured from the cones and made into a concentrated hash almost doubling its potency. This 7% and 90 IBU beer is surprisingly drinkable with the addition of crystal 20 malt to round the flavor out just enough.

Sigmund's IPA

A combination of Pilsner, crystal malt and rolled oats give this ale a nice golden-blonde color with a light-medium body. Amarillo and Lemon Drop hops were used in the kettle as bittering, flavor and aroma additions. This IPA was fermented with a Norwegian farmhouse yeast that got all the way up to 98°F and completed fermentation in 48hrs! We proceeded to dry hop this ale aggressively with a healthy dose of Amarillo, Lemon Drop, Cascade and Citra hops to compliment the fruit esters from the yeast. At 6.2% ABV and 29 BU’s, this farmhouse style IPA has a soft bitterness, lots of citrus flavors and aromas with a subtle funk that should make any hop lovers’ day!

1+1 = 12? One of the most exciting parts of creating a barrel cellar as expansive as ours is the opportunity to blend flavor components together, creating something that is greater than the sum of its parts. Mélange #12 is a uniquely debonair blend of some of our favorite strong ales that have been allowed to age gently in bourbon barrels for an average of nearly 22 months. Once these barrels were carefully selected to blend, we chose to enhance the beer and barrel flavors with three of our favorite ingredients: cacao nibs, vanilla beans and hazelnuts. The result is one of our most lavish beers to date.
